Glaze Recipe for Christmas Ham
A ham studded with cloves looks brilliant on the Christmas table - but it's not so much fun when you chomp down on a whole clove and ruin the subtle flavour of the pork. Mick grinds his cloves to a powder so you get a hint of Christmas clove - without the punch of a whole one!
100g light brown sugar
160g pure Maple syrup
25g Dijon mustard
25g Grain mustard
Mix all ingredients together until sugar dissolves.
Brush a third of the glaze over your prepared ham and place on a cake rack on a disposable tray
Pour a 330ml bottle of cider in the bottom of the tray and place in a preheated oven at 180 degrees for about an hour and a half. Brush the remaining glaze over the ham every 15-20 minutes until it caramelises and goes dark caramel brown.
