A good Reuben should be loaded up - so don't be shy!

A Reuben sandwich should be loaded - so don't be shy!
Load your sandwich up with brisket, sauerkraut, Swiss cheese, pickles and Russian dressing. You wont be sorry!
500g Salt Kitchen brisket pastrami
1 Loaf of good rye bread
1 jar sauerkraut
8 slices Swiss cheese
1 cup Kewpie mayonnaise
1/2 teaspoon smoked paprika
1 teaspoon Worcestershire Sauce
1 Tablespoon grated Horseradish
1 Tablespoon very finely chopped red onion
Tabasco - as much or as little as you like
Salt and Pepper to taste
Cut NY brisket length ways into four thick slices
Slice 8 slices of rye bread and butter them
Place two slices of Swiss cheese on each sandwich
Mix Russian dressing ingredients – mayonnaise, paprika, Worcestershire sauce, horseradish, red onion, Tabasco, salt and pepper
Grill or pan fry NY brisket slices until brown on both sides
Place on Swiss cheese side of the sandwich
Mound on a good handful of sauerkraut
Add a liberal dollop of Russian dressing
Add your sandwich top and eat with Dill pickles
