Frequently Asked Questions

Where do the products come from?

All fresh pork and charcuterie products come from Western Plains Pork which is located in the Western District of Victoria, between Ballarat and Geelong. We are producers of world class pigs. Western Plains pigs are grown to meet the specific requirements of Salt Kitchen Charcuterie whose handmade charcuterie products are equally world class. Salt Kitchen Charcuterie also uses local Wagyu beef from Sher Wagyu located in Ballan. All charcuterie products are handmade in The Salt Kitchen facility in Ballarat, Victoria.

Who are the companies behind Pork Farm to Plate?

There are two companies behind Pork Farm to Plate: a collaboration between two like-minded, local Victorian entities.

Firstly, all pork produce comes from Western Plains Farms, located in the Western Districts of Victoria, between Ballarat and Geelong. Western Plains Farms was established in 1997 and has been producing pigs for the food service industry for over 20 years. Western Plains Pork hasn't previously been available direct to the public, other than in leading restaurants across Australia. Pork Farm to Plate is our first venture into direct-to-the-public supply.

Western Plains is committed to the principles of high welfare pork where animal health and wellbeing, environmental sustainability and the highest standard of service to our customers, is at the forefront of our daily operations.

With great respect for our people, our land, our animals and our customers, our approach to producing high quality pork ensures long term sustainability and minimal environmental impact across all stages of our supply chain.

Our eyes are set on the future. That’s why we stay ahead of the curve with both sustainable farming and environmental management.

The second company behind Pork Farm to Plate is Salt Kitchen Charcuterie (SKC). SKC is a local charcuterie business, based in Ballarat, Victoria. Using quality produce from across Western Victoria, SKC handmade charcuterie prioritises flavour as the determining factor for all products.

Having spent time in the UK and France, we have the knowledge and skills to produce charcuterie using time-honoured, ancient methods. The female pigs sourced from Western Plains Farms have been grown free range to a specific size and muscle structure.

The SKC philosophy is to utilise the entire carcass and to make fresh sausages, hams, bacons, terrines and dry cured products from the pigs. The beef is from Sher Wagyu in Ballan Victoria, for production of the pastrami and bresaola.

SKC seeks to establish our products with the provenance and expression of the region. We want for you, our customer, to know you’re buying a Western Victorian product.

Are the products ethically produced?

Each animal is raised with care and respect because we appreciate the importance and impact of animal welfare: both during the animal's life and on the product it delivers. The same principles are applied to our farming approach with respect to the environment and to our people. Our mission is to ensure we create a better place for everyone throughout the farming lifecycle.
